Effet de la pression sur les transitions de phase dans les biomatériaux ; exemple d'un calorimètre haute pression

Abstract : Biomaterials are complex matrix and are subjected to multiple interactions. Elementary constituents (proteins, carbohydrates, lipids, water...) can go through phase transitions under the effect of pressure or temperature alterations. Pressure effect on phase transitions is presented with a particular interest for aliments products. A high-pressure calorimeter developed in our laboratory in order to study those transitions is presented.
