            <abstract xml:lang="en">
              <p>This paper describes a preliminary study aimed at improving the quality of soft-blue veined cheeses by the use of magnetic resonance images analysis. MRI measurements were performed on thirty-two samples from two different processing conditions and at three different stages from day 3 after the production to day 37. A segmentation algorithm based on a Self Organizing Map was used to segment the image into six classes. A cavity extraction was then performed. A principal component analysis was computed on variables corresponding to the cavities surface distribution. The results pointed out differences between the two types of cheeses, particularly for day 3 and day 37. This confirmed the interest to use MRI to analyse such products. Further investigations re planned for the analysis of other characteristics of the cheeses and other methods of segmentation.</p>

              <p>Cet article décrit une étude préliminaire visant à améliorer la qualité de fromages à pâte persillée en utilisant l'imagerie par résonance magnétique nucléaire. Les mesures IRM ont été réalisées sur trente deux échantillons issus de deux conditions de fabrication différentes et à trois stades différents de 3 jours à 37 jours après la date de fabrication. Un algorithme de segmentation basé sur une carte auto-organisante de Kohonen a été utilisée pour segmenter les images en six classes. L'extraction des cavités a ensuite été réalisée. Une analyse en composantes principales a été faite en utilisant des variables décrivant la distribution surfacique des cavités. Les résultats de cette analyse ont montré des différences entre les deux types de fabrication en particulier pour les jours 3 et 37. Cela a confirmé l'intérêt d'utiliser l'IRM pour analyser de tels produits. Des investigations plus poussées seront faites afin d'analyser d'autres caractéristiques des fromages ainsi que de nouvelles méthodes de segmentation.</p>
