This paper presents three approaches of innovation processes in Languedoc wine co-operatives. Economic and statistical analyses show the diversity of combinations of innovations and their efficiency whenever they cover the different steps of the production chain. The longitudinal analysis of innovating action systems highlights the importance of knowledge and relationships built through processes confronted with numerous trials. Finally, the study of exchanges in managers’ advice underlines the role of local networks in the dynamics of the productive and social milieu. The combination of these approaches shows the interest of an interdisciplinary analysis of innovation in localized agrifood systems from both scientific and operational perspectives.

L'article analyse les processus d'innovation dans les coopératives viticoles du Languedoc en associant trois approches de l'innovation croisant économie et sociologie. L'analyse économique et statistique montre la diversité de combinaisons d'innovations élémentaires et leur efficacité lorsqu'elles couvrent différentes étapes de la production. L'analyse longitudinale de systèmes d'action innovants souligne l'importance des connaissances et relations construites dans des processus soumis à de nombreuses épreuves. L'étude des échanges de conseils des dirigeants des coopératives précise le rôle des réseaux locaux dans la dynamique du milieu productif et social. La combinaison de ces approches montre l'intérêt d'une analyse interdisciplinaire de l'innovation dans les Systèmes agroalimentaires localisés, dans un objectif à la fois scientifique et opérationnel.
