White and wines : un modèle de marché à l'épreuve des vins du Languedoc

At the interface between sociology and economy, the works of Harrison White break with other approaches of social structures and markets. The aim of this paper is to show how his contribution, applied to wine, improves the understanding of quality goods markets and stimulates the reflexion about mechanisms underlying these markets. The analysis of the three iinstitutional catgories of wine in Languedoc reveals three types of production markets formalised by H.C.White and highlights their different forms of embeddedness. This analysis pushes also to go beyond a reified approach of interactions to better catch sub-systems and dynamics, while giving tools to interpret and advice the construction of new concrete markets. White's market model emerges after all as a stimulating intermediary object for a theoretical and operational meeting between economy and sociology.
A l'interface entre sociologie et économie, les travaux d'Harrison White marquent une rupture dans l'approche des structures sociales et des marchés. L'objectif de ce papier est de montrer en quoi ses apports, appliqués au cas du vin, permettent d'enrichir la compréhension des marchés des biens de qualité et de stimuler la réflexion sur les mécanismes sous-jacents. L'analyse des trois catégories de vins instituées en Languedoc, révèle trois types spécifiques de marchés de production modélisés par H.C. White et rend compte des différentes formes de leur encastrement. Elle invite aussi à dépasser une approche réifiée des interactions pour mieux saisir sous-systèmes et dynamique, tout en donnant des outils pour interpréter et conseiller la construction de nouveaux marchés concrets. Le modèle de marché de White émerge finalement comme un objet intermédiaire stimulant, pour une rencontre théorique et opérationnelle entre économie et sociologie.
