Structure des protéines stabilisatrices des réserves lipidiques de plantes oléagineuses

Abstract : Oleosins and caleosins are proteins that stabilize seed oleosomes and hamper oil extraction. Using synchrotron radiation circular dichroism on the DISCO beamline, we determined the secondary structure content of two oleosins and caleosin. It suggests that their central hydrophobic anchoring region folds as beta sheets.
