Résumé

Current changes in the conditions for exercising farming activities call for the development of new forrns of organisation: this is an imperative for the farrners and a scientific challenge for researchers. In some farrn-level approaches, emphasis on resource allocation studies has shifted to the study of activity co-ordination. One such Une of research focuses on the farm's steering system by modelling the farrner's decisions and the way these are implemented. In this case the change process is viewed as an adaptive response to environmental change. The other, more recent trend considers the relations between the farmer and the other agents who structure his environment. Here the focus is on the integration of the farrn within productive systems imposed by the targeted end-product (production-processing-marketing chain) or localised in a particular area or " district ". The authors consider that individual logic and forrns -of Integration do not cover ail the possible models of farmer organisation. They explore a further avenue, that of the collective management of new emergent functions, aprocess whieh they regard as a change in co-ordination forrns. Analysing the farm from the standpoint of co-ordination forms enables them to link relational modalities to knowledge distribution among the actors engaged in a collective process. Working with pig farmers in Corsica, the authors modelled -the changeover from on-farrn, individuaily produced cured pork meats to their collective ageing (affinage) in a fruitière in order to produce a high-grade product. These farmers are in fact seeking to move out of an individual rationale without, however, becoming mere suppliers of a raw product to a co-operative or an industrial processor. They join forces as free and independent professionals in a " horizontal" type of coordination which preserves individual responsibility right up to the marketing stage. Developing common rules that concem not only the products but also the animaIs from which these products originate is a central factor in the process. AlI along the process, tests enable the actors engaged in the procedure to check the " technical objects" being thus constructed. This system links the functioning of these new objects to the expression ofthe different knowledges ofthe participants in the mIes. The form oforganisation known as fruitière is based on an allocation ofresponsibilities and the orchestration ofcompetencies distributed within a group solidarised by a common commitment. The fruitière or cheese dairy system was developed long ago by the dairy farmers ofthe Jura and Alps mountains. It shows it self to be still relevant as a form of organisation in which new technical functions can be managed collectively while safeguarding the individual's responsibility in the functioning ofhis farm. This form ofco-ordination affords small-size groups the possibility ofmastering their integration in their environment.
Dans un contexte de changement des conditions d'exercice de l'activité agricole, concevoir de nouvelles formes d'organisation collective constitue un enjeu pour les agriculteurs et une question scientifique pour les chercheurs. L'approche de l'exploitation agricole à travers les formes de coordination permet de coupler mode relationnel et distribution des connaissances entre les acteurs engagés dans une démarche collective. En Corse, nous avons modélisé une trajectoire de passage de producteurs fermiers de charcuterie sèche à un affinage collectif pour commercialiser un produit de haut de gamme. L'organisation " en fruitière " ainsi explorée relie au sein d'un collectif le fonctionnement d'objets techniques et l'explicitation des savoirs dans des règles. Cette construction de solidarités nouvelles s'appuie sur l'attribution de responsabilités et l'agencement de compétences distribuées. La dynamique de qualification ponctue l'émergence des critères saisis par des dispositifs dans la succession des épreuves. La fruitière, vieille institution créée par des éleveurs du Jura et des Alpes, s'affirme comme un modèle d'organisation contemporain qui permet le pilotage collectif de nouvelles fonctions techniques en maintenant la responsabilité individuelle des agriculteurs sur le fonctionnement de leur exploitation. Une telle forme de coordination ouvre à des groupes restreints d'agriculteurs la possibilité de maîtriser leur insertion dans leur environnement.
