Abstract : Casein micelles are known in the food industry for their techno-functional properties (emulsifying, gelling agents, etc.) and their nutritional value. The objective of this work is to deepen knowledge of the nature of interactions between proteins and minerals in the casein micelle, in order to better understand the properties of casein micelles. To achieve this, we modulated the mineral component of the casein micelle either by enrichment or by selective depletion of calcium and colloidal inorganic phosphate (CCP) and using solid-state NMR of the 31P and 1H nuclei. The experimental results seem promising, since we have succeeded in deducing with the help of solid-state NMR tools several forms of phosphorus in the casein micelle: using the ZG acquisition we have succeeded in identifying the free inorganic phosphate or CCP participant; with cross polarization, phosphoserines interacting with calcium (organic phosphate bound to proteins) were characterized. In the same context of this work, several tests are currently being tested to improve the cross-polarization experiments of calcium-free solutions because under these conditions, we were not able to identify the organic phosphorus of the casein micelles.
