Vietnamese consumer habits and the role of fresh food

Résumé
This paper presents findings of a consumer survey carried out in Vietnam. the survey has been implemeted in two steps : qualitative and quantitative. The main profile of respondants are women, urban consumers, age from 24 - 39, office workers. The results provide an overall view on the criteria of choice in food buying decision. Concretely, sensorial factors like observing, touching, smelling play a very important role in food choice, more than trust on the vendor or certifcation of a third party like the Government. the consumer appreciates fresh food, assimilating to nutritional value, health and quality of the meal. However, there seems to be a generational difference between two generations: that of people over 40 years old with stable incomes willing to buy at supermarkets and safe food shop, and that of younger people who are aware of food safety problem, but usually buy food at traditional markets because of low income or lack of time.
Bài báo này trình bày kết quả một khảo sát người tiêu dùng được tiến hành theo hai bước, định tính và định lượng tại Việt Nam. Mẫu khảo sát thu được có một phần lớn là người tiêu dùng thành thị, nữ giới, có độ tuổi từ 24 - 39, nghề nghiệp văn phòng. Các kết quả trong tổng thể do đó tương ứng với các tiêu chí lựa chọn thực phẩm của mẫu khảo sát này. Cụ thể, các yếu tố cảm quan đóng vai trò rất quan trọng trọng việc lựa chọn thực phẩm, cao hơn sự tin cậy vào người bán hàng, hay sự đảm bảo của một bên thứ ba như chứng nhận nhà nước. Người tiêu dùng hướng đến thực phẩm tươi, vì cho rằng tươi đồng nghĩa với dinh dưỡng, sức khỏe, và chất lượng bữa ăn. Tuy vậy, dường như có một sự khác biệt thế hệ, giữa những người trên 40 tuổi có thu nhập ổn định sẵn sàng mua hàng tại siêu thị, cửa hàng thực phẩm sạch với thế hệ những người trẻ hơn, ý thức được tầm quan trọng của ATTP nhưng vẫn kết hợp mua hàng tại chợ dân sinh, chợ tạm vì thu nhập thấp hoặc thiếu thời gian.
