Recherche par volatolomique de marqueurs d'exposition aux micropolluants dans les produits issus d'animaux d'élevage

Abstract : Due to an European request for increased chemical safety of food, the environmental impact of contaminants traces such as polychlorinated biphenyls and their toxic effects on human health are monitored. Currently, the high-throughput analysis tools are too expensive and these are cumbersome procedures. Other efficient approaches are proposed, through a thesis of the SENTINEL project entitled « Research by volatolomics of markers of exposure to micropollutants in products derived from livestock ». The impact of PCBs on metabolism and volatile compounds extracted are analysed by the GCMS analytical technique in the liver of chickens. First of all, it’s essential to choose an extracting method of these volatile compounds. It’s made of SPME fibers which must be batched according to sensitivity criteria and VOC extraction. Secondly, we have to choose the type of quality control sample that will be performed during the experiments in order to reduce analytical drift. Finally, after statistical analysis, the fingerprints and then the markers of exposure to PCBs will be revealed.
