              <p>Over the last thirty years, in vitro digestion methods have been developed in thelaboratory to partly replace animal and human experimentations, enabling different foods tobe tested in various conditions. These methods essentially differ in their static or dynamicnature, and in their biochemical or mechanical approach, although hybrid methods exist. In this review, after a section on the digestion processes taking place in the human digestivetract, we will present the Infogest methods that aim to harmonize in vitro digestion researchpractices. Then, we will describe advanced methods which reproduce specific processes ofgastrointestinal digestion or of mastication. We will end by illustrating recent applications inthe fields of nutrition and food sciences with examples linked to digestive physiology, foodstructure, molecular reactivity, and to various metabolic aspects.© 2022 Soci ́et ́e franc ̧aise de nutrition.               <p>Depuis une trentaine d’années, des méthodes de digestion in vitro ont été déve-loppées en laboratoire pour remplacer certaines expérimentations animales et humaines,permettant d’étudier la digestion de nombreux aliments dans des conditions variées. Cesméthodes se différencient essentiellement par leur nature statique ou dynamique, et leurapproche de type biochimique ou mécanique, bien que des méthodes hybrides existent. Danscette revue, après un rappel des processus de digestion se déroulant dans le tractus digestifhumain, nous présenterons les méthodes Infogest qui ont pour objectif d’harmoniser les pra-tiques de recherche en matière de digestion in vitro. Puis, nous décrirons certaines méthodesavancées reproduisant des processus spécifiques de la digestion gastro-intestinale ou de la mas-tication. Nous terminerons en illustrant les applications récentes en sciences de la nutrition etdes aliments par des exemples liés à la physiologie digestive, à la structure des aliments, à laréactivité moléculaire, et à différents aspects du métabolisme.© 2022 Soci ́et ́e franc ̧aise de nutrition.
