Résumé
Objective:
To identify food transitions in the world since the mid-20th century.
Method:
Analyses are for total caloric availability, animal and plant products (kcal/capita/year) from FAOSTATS (1961-2018). Hierarchical clustering analyses were used.
Results:
The analysis identified 5 typologies (Typ). The “High caloric, meat” Typ presents a high caloric availability, of animal origin (1100 kcal/d) and increasing in plants (1800 to 2200 kcal/d) and groups the rich countries. The “High caloric, vegetable” Typ presents a high caloric availability of vegetable origin (2500 kcal/d) and increasing in meat (500 to 900 kcal/d) and concerns the southern European countries. The following clusters have increasing caloric availability. The “Intermediate” Typ is growing in vegetables (from 1900 to 2400 kcal/d) and in meat (300 to 500 kcal/d). The “Limited caloric, meat” Typ is intermediate in meat (600 kcal/d) and increasing in vegetables (from 1600 to 2000 kcal/d). The “Limited caloric, vegetable” Typ is very limited in meat (200 kcal/d) and increasing in vegetables (from 1800 to 2200 kcal/d) and groups together the poor countries.
Conclusion:
Between 1961 and 2018, food availability has increased but with marked regional disparities associated with the economic level and geographical particularities.

Identifier les transitions alimentaires dans le monde depuis le milieu du 20ème siècle.
Méthode :
Les données concernent les disponibilités énergétiques totales, en produits animaux et végétaux (kcal/capita/an) de FAOSTATS (1961-2018). Des analyses de classification hiérarchique ont été utilisées.
Résultats :
L’analyse a identifié 5 typologies (Typ). La Typ « Énergie élevée, carnée » présente une disponibilité énergétique élevée, d’origine animale (1100 kcal/j) et croissante en végétaux (1800 à 2200 kcal/j) et regroupe les pays riches. La Typ « Énergie élevée, végétale » présente une disponibilité énergétique élevée d’origine végétale (2500 kcal/j) et croissante en viande (500 à 900 kcal/j) et concerne les pays du sud de l’Europe. Les Typ suivantes ont des disponibilités énergétiques croissantes. La Typ « Intermédiaire » est croissante en végétaux (de 1900 à 2400 kcal/j) et en viande (300 à 500 kcal/j). La Typ « Énergie limitée, carnée » est intermédiaire en viande (600 kcal/j) et croissante en végétaux (de 1600 à 2000 kcal/j). La Typ « Énergie limitée, végétale » est très limitée en viande (200 kcal/j) et croissante en végétaux (de 1800 à 2200 kcal/j) et regroupe les pays pauvres.
Conclusion :
Entre 1961 et 2018, la disponibilité alimentaire a augmenté mais avec des disparités régionales marquées associées au niveau économique et aux spécificités géographiques.
