Résumé

A study was conducted on 100 alternative pig farms in France to assess the level of Salmonella excretion of pigs at end of the fattening period (over 22 weeks). An alternative farm is a farm where pigs have access to the outside or are housed on litter in a semi-open building. In each farm, feces were collected individually from 10 pigs (n= 1000 samples). The detection of Salmonella was carried out according to the standardized NF-U47-102 method and enumeration using a method based on the most probable number (MPN) (ISO/TS 6579-2-2012). Isolates were serotyped by agglutination according to the Kauffmann-White scheme and ISO/TR 6579-3:2014 method. Salmonella was detected in 26% IC [17.4-34.6]95% of the farms, and 50% of the positive farms had less than four positive pigs per farm of the 10 pigs sampled. Among the 116 positive samples (11.6% IC [9.6-13.6]95%), 65 were countable (> 1.6 MPN/g). Average excretion of Salmonella was 52.6 MPN/g (± 152.5 MPN/g). Eight serotypes were identified (n=116 isolates) with S. Derby being the most prevalent serotype (63.5% of the isolates) followed by the monophasic variant of S. Typhimurium (20.0%). The level of Salmonella excretion by pig was not associated with the type of serotype that was isolated in the feces. These results gave for the first time data concerning the level of Salmonella excretion in alternative pig farms at the end of fattening stage. These data could be useful to assess the level risk of contamination of the food chain.
