Bioinformatics: In-depth analyses of omics data in the field of muscle biology and meat biochemistry

Résumé

Bioinformatics is an essential tool for deeper investigation of the biological processes involving genetic expression, physiological responses, enzyme-, and metabolic activities that impact meat quality. However, limited reports are available regarding bioinformatics tools, methods, and databases in muscle and meat biochemistry. This chapter discusses in-depth bioinformatics analyses of omics data with applications in muscle biology and meat biochemistry. More specifically, methods, tools, software packages, resources, and databases used in bioinformatics in the form of a workflow from experimental data to interpretation, followed by a brief discussion of the potential use of public omics data integration in meat science with a focus on proteomics, metabolomics, and the potential applications of multi-omics from a one-dimensional to a systems-level analysis in the general areas of muscle biology and meat biochemistry.
