Tastes in Contemporary History (invited lecture)

Résumé

"Taste" is, if not exactly an elusive, a polymorphic notion. Its uses depend on contexts and points of view. The talk highlights three meanings and provides examples to illustrate them from the era when industrialisation began to gain ground in food production: taste as the chemical quality imparting flavor to a food and which we sense with our tongue [the taste of …]; taste as the drive to get something between our teeth and develop an appetite for it [a taste for …] ; and finally taste as the ability to judge or express a preference for a certain quality in goods [a taste in …].
