Moulds and mycotoxins along the cereal value chain: from plant health to human health

Résumé

Preserving the food chains from chemical contaminants meets the two first benefits of One Health : One- improving health of humans, animals, plants and the environment. Second - keeping food safe from farm to fork. This have immediate and long-term benefits for People, Planet and economy, Protecting the food chain from chemical contamination is a constant concern for stakeholders in the agricultural and agro-industrial sectors. In France, various sectors are working together within a network supported by the Ministry of Agriculture. Its name is the RMT Al-Chimie. The sectors share their problems, but also their solutions, and point out the needs in research and development to control the risks of contamination. Of course, there are differences between the various sectors, but what they have in common is the long list of contaminants likely to end up in consumers' daily food. Mycotoxins have a special place in this list because they occur so frequently and are not directly related to human industrial activity. Currently, mycotoxin contamination is considered as one of the most important food and feed safety challenges in the food an feed industry. It is particularly prevalent in the cereal production chain. Due to climate change, a shift in the mycotoxin contamination pattern as well as geographical distribution pattern is expected. Agriculture and agroindustry practices are also changing with the development of the agroecology and decreasing in the use of protectants and additives. And, consumer demands and habits are evolving, with an increase in the consumption of plant-based substitutes for meat and dairy products, and development of short-distance purchases. This conference introduce mycotoxins in the creal food chain and present issues in the domain of plant health, environment health, issues from plant to environment health and food safety.
