Cognitions environnementales et rentes liées aux produits et services touristiques : l'exemple du tourisme rural dans les Baronnies

Abstract : This communication develops a model of tourist products and services differentiation in rural areas that we call "cognitive differentiation". This model is based on consumers’ environmental cognitions as origin of joint preferences for environmental amenities, “terroir” products and entertaining activities. This environmental anchoring leads to a rigid demand for these joint products/services and reinforces the potential territorial quality rent that we observed in former research. First section shows how the relationship between tourist activities and environmental services is built. It is based both on Lancaster’s approach of the complex goods demand and the marketing concepts on the environmental cognitions complexity (attitude, beliefs, emotional lived) on which are based consumer's preferences and the tourist products and services differentiation. The second section highlights the joint valorisation of environmental services and “terroir” quality products in the case of rural tourism in Baronnies, starting from an investigation carried out with tenants and owners of lodgings during summer 2003.
