The elderly confronted with culinary dependence: between delegation and replacement

Food practices change with ageing. Among the factors which can explain these modifications, we insist here on the effects of the culinary dependence leading the elderly who are no more able to ensure provisioning and/or preparation of meals to delegate them to a third person. We distinguish various configurations according to the relationships between the elderly and their helpers: husband or wife, child, professional helper. The analysis is based on a survey on elderly over 60 year old (N=800) and on about fifty interviews with people between 70 and 90 years living at home. The statistical results show that the delegation of the provisioning increases with age and implies more and more people out of the circle of the household and kinship, implying a weaker control on food choice and a modification of food. The qualitative study shows then that the culinary dependence leads to a redefinition of the marital roles (variable according to the incapacities and the gender of the dependent) and allows to a better understanding of the recourse to a nonmarital third (child, professional home helper). The gender and the statute of helpers (husband/wife; son/daughter; professional) and the relation between the elderly and their helpers play a central role to maintain or to change food habits.
