Effets des conditions d'alimentation et d'abattage sur les caractéristiques de carcasse et de viande du Caprin Créole

Abstract : The objectives of the project of thesis were: 1) to provide knowledge on the meat production and quality of Creole goat, 2) to determine the main conditions of breeding and slaughtering that influence the parameters. On this second point, the feeding system and the age/weight at slaughter were the 2 main factors of variation. Two trials were conducted. The first has raised 91 kids in a 2x3 factorial arrangement which tested the effect of grass alone versus mixed diets (50 % of concentrate) with 3 slaughter ages: 7, 11 and 15 months. The second trial used 40 kids receiving a diet consisting of grass with 0, 25, 35 or 50 % of a commercial concentrate. The main result of the project is that it is possible to improve the growth rate (up to 85 g/d), the weight (12 kg) and carcass conformation (up to 4 on a scale of 5) and the quality of Creole goats' meat through feeding strategies. Grass alone (cut or grazed) and mixed diets can potentially give similar quality carcasses with variable durations of feeding. Within the grass diet, grazing and indoor did not lead to similar results. In terms of meat quality it appeared that, as reported with other goat breeds, the Creole goat produced a very satisfactory lean meat even with high energy diets because of an abdominal fat accumulation (4-7 % of the empty live-weight). With regard to the other characteristics of the meat, the FA profile and the pH level were similar to those of other breeds. The supply of concentrate (240 g/d of concentrate, approximately 50 % in the diet DM) did not increase the SFA in the meat and had reduced the ratio n-6/n-3 under the value of 4-5 (threshold value for human health). The consequences of this study are potentially important for the local goat sector. The foundations for 1) the production of technical packages and animal genetic policies adapted to the Guadeloupean context; 2) the definition of a strategy for a Creole goat meat labelled have been laid. Further studies are required on the sensorial qualities of the Creole meat, on the impact of the parasitism on carcass and meat characteristics and on the technical and economical assessment of new feeding systems using local non conventional feeds. Thus this work allowed to promote an indigenous breed reared under intensive feedlot system producing heavy and well-conformed carcass without deterioration of the meat quality
