Enrichissement des fruits charnus en caroténoïdes : exemple de la tomate et des agrumes

Abstract : Carotenoids are pigments responsible for the yellow, orange or red colour of fruits; they play a major role in their organoleptic and nutritional qualities. In plants, carotenoids contribute to important physiological functions and they help plants to adapt to changing environmental conditions. Thus, numerous works on this subject aim at enhancing carotenoid contents in plant and particularly in fruits. This review draws comparisons between the results obtained on tomato and citrus before synthetizing insights gained into developmental, genetic, and environmental controls and discussing possible developments. On this basis, we propose a conceptual model of carotenoid accumulation in fruits that accounts for the role played by environmental factors. The development of such a model allowing simulations of carotenoid contents will pave the way of a better management of these metabolites.
