Intérêt nutritionnel de la couche à aleurone du grain de blé
Résumé
The aleurone layer is an histological tissue of the wheat seed located between the endosperm and the outer layers. It is with the embryo the only living tissue of the wheat seed and it plays a role in the embryo development during germination. It is a storage place for metabolites and it allows the synthesis and secretion of hydrolytic enzymes that produce nutrients for embryo growth. Besides, it ensures embryo safety with its highly resistant cell wall structure. The aleurone layer is a complex tissue that contains high concentrations of interesting nutritional molecules. The aim of this review is to collect data concerning the aleurone microstructure and biochemical composition for the development of new technologies adapted to the aleurone nutrients valorisation.
La couche à aleurone est une couche histologique localisée à la périphérie du grain de blé entre l'albumen amylacé et les enveloppes. Elle est, avec l'embryon, l'unique tissu vivant du grain mature et permet son développement au cours de la germination. Elle assure à la fois un rôle nourricier via le stockage de métabolites et la synthèse d'enzymes d'hydrolyse des réserves, et un rôle de protection grâce à sa structure pariétale résistante. La couche à aleurone est un tissu complexe qui renferme des concentrations importantes de molécules d'intérêt nutritionnel. Cette revue bibliographique veut faire l'état des connaissances sur la microstructure et la composition biochimique de ce tissu pour servir de base au développement de technologies adaptées à la valorisation de son contenu en micronutriments.
