Transition alimentaire et (re)mise en place de circuits d’approvisionnement de proximité : quelle articulation des proximités ? Quelles logiques de proximité dans l'approvisionnement de la restauration collective scolaire ?

Abstract : Today, consumers are used to supply in long distance food chains. But this organization causes various environmental pressures inducing the necessity of a transition in food practices of all the actors operating in food chains. This transition implies the development of more proximity chains (Praly et al, 2009). But, do actors in food system really engage in this transition, that imply to modify their organization of the food chains as the articulation of the various kinds of proximity that allow their coordination? We have used interviews with collective catering in secondary schools of Burgundy to identify the brakes to change in the organization of the supply. One of the main brakes is the lack of proximity between buyers and suppliers.
