Impact d’un écart des prix de détail du porc frais sur les achats des ménages : approche économétrique

Abstract : Price is one the main drivers of consumer choices. In order to evaluate the impact on consumption of a difference in the retail price of fresh pork, a logit demand model was estimated using purchase data from the household panel Kantar Worldpanel. This model allowed us to estimate price elasticities of demand, which provided the impact on purchased quantities of different fresh meat products when the price of a meat product was higher. The study was first carried out considering several cuts of fresh pork in different distribution channels. Price elasticities ranged from -3.4 to -5.6% depending on the different “cut of meat x distribution channel” combinations. They were larger for products sold in hard-discount and traditional outlets (butcher’s shops, markets). The consumption substitutions varied according to the distribution channels but were mainly directed towards other meat products than fresh pork. In a second phase, the demand for “fresh pork” was analyzed by taking explicitly into account possible substitutions with various categories of meat products (butcher’s meat, poultry, deli meats, fish, etc.). The estimate of the own price elasticity of fresh pork was -1.3, among the lowest in the chosen meat categories. When the price increased, the substitutions for fresh pork were mainly directed towards ready meals, eggs and other pork products including cooked ham.
