Enzymes for the valorization of fruit and vegetable-based food waste co-products

Résumé

Applications of enzymes in the upgrading of fruit- and vegetable-based waste co-products are reviewed. Fruit and vegetable by-products are largely underexploited and their valorisation into functional compounds and their application in food is a promising field. Over the last years, the increasing amount of scientific research in this field shows the growing interest for renewable plant resource utilisation. Pectin-degrading enzymes as well as enzymes active towards cellulose and xyloglucans are described and their potential and current uses are explained and the uses of the final products are documented. Non-scientific aspects such as the economics, legislation, and the consumer point of view are also discussed.
