[P1.103] Apple viscoelasticity: Turgor and cell wall contributions
Résumé
Better control of texture variability during fleshy fruit production and selection for their different uses would help promoting fruit consumption, ease processing and limit wastes. This goal requires an understanding of structural factors determining the different texture descriptors (firmness, mealiness…) in which cell walls play a major role, being associated with cell turgor and tissue cohesiveness. Detailed knowledge on relations between cell wall polysaccharides structure and function on tissue properties will be beneficial for the design of improved varieties and processes. To that aim, this work evaluated turgor and cell walls contributions to apple viscoelastic mechanical properties.
