Is the spontaneous fattening of waterfowl liver a realistic alternative to overfeeding, on the basis of the current state of scientific knowledge?

Abstract : Practiced in ancient Egypt 4500 years ago, force feeding had as first objective the fattening of migratory birds, with the main goal to constitute energy storage for human consumption. It is much later that the Roman have recognized foie-gras as a delicacy, and that the purpose of force feeding had for subsequent objective the production of one of the highest dish of gastronomy. Following a long and rich history, the procedure of force feeding is still employed in the countries where foie-gras production is established. However, since so far, the production of foie-gras requires force feeding, there is a climbing controversy regarding its potential implication to animal welfare. Although recent studies, Guémené and Guy (2004), Guémené and al (2006), have shown that when the process follows the right rules of practices, the negative effects for birds are considerably limited, the method remains under debate. Furthermore, considering the recommendation found in the report of the scientific committee for animal health and welfare (1998), alternatives methods to force feeding should be investigated. In this report we will first have an overview of the particularities which make that several waterfowl species are able to enhance the fattening of their liver. Thereafter, we will try to discuss the existing opportunities to obtain a spontaneous development of the liver.
