Performances laitières et qualité des laits et des fromages dans deux systèmes de pâturage du Massif Central présentant des niveaux de biodiversité contrastés

Abstract : The reinforcement of the requirements of the PDO (Protected design of Origin) cheese products encourage breeders to promote grass and to be awarded for biodiversity. An experiment set in a mountainous region of central France compared two grazing systems on animal performances, grass productivity, milk and cheese quality and biodiversity during two years: [DIV-] managed with a rotational grazing on former temporary grassland at “high” stocking rate (0.3 ha/cow in spring) and [DIV+], managed with a continuous grazing at low stocking rate (1 ha/cow) on diversified permanent grassland. Twelve dairy cows were used in each system without concentrate supplementation. DIV+ had a higher milk production at the beginning of the grazing season than DIV- (+3.1 and + 1.0 kg/cow/day), thanks to a greater herbage allowance and better grass quality selected by the cows. At the beginning of the summer, an inversion of milk production was observed following the decrease of the grass nutritive value. There were differences in milk composition between the two systems: on average, fat content was higher (+1.6 g/kg) for DIV+ and protein content was higher (+0.9 g/kg) for DIV-. The level of polyunsaturated milk fatty acids was lower in DIV- than in DIV+ at the beginning of the season but remained constant all along the season to the contrary of DIV+ where it decreased. Cheese sensory properties were different between systems only with a long maturation of 6 months. Lastly, Insect and flora biodiversity was much greater in DIV+. DIV+ is thus compatible with a high level of biodiversity.
