Tell it or make it tasted? Impact of sensory vs. non sensory cues on the categorization ofa new food product

In this research, we use the expectation-disconfirmation and the categorization theories to study the effect of sensory vs. non-sensory cues relative to a transformed attribute on categorization and typicality judgments of a new product. In an experiment involving fifty one participants and low-alcohol wines, we show that categorization and typicality judgment may be different according to the sensory vs. non-sensory condition. The non-sensory condition leads to more categorization of the new transformed product in its original -winecategory and to perceive higher typicality compared to the sensory condition.
Dans cet article, nous nous appuyons sur la théorie de la non confirmation des attentes et sur la théorie de la catégorisation pour étudier l’effet des informations sensorielle et nonsensorielle relatives à un attribut modifié, sur la catégorisation et la perception de typicalité d’un nouveau produit alimentaire. Une expérimentation menée sur 51 participants avec des vins à teneur réduite en alcool montre que la catégorisation et les perceptions de typicalité des produits peuvent être différentes selon la nature de l’information, sensorielle ou nonsensorielle. Ainsi, la condition non-sensorielle entraîne davantage l’attribution du nouveau produit dans sa catégorie de référence et des jugements de typicalité plus élevés que la condition sensorielle.
