How do farming methods in Europe influence the quality of chicken meat? H2020 INTAQT project “One quality” concept

The H2020 INTAQT project: 'INnovative Tools for Assessment and Authentication of chicken meat, beef, and dairy products' QualiTies' was proposed in response to a European priority to acquire knowledge and tools to better assess the link between farming systems and animal product quality. This request came in the context of a transition already underway in European livestock farming systems, mainly motivated by societal, ethical and environmental issues, but for which we lack information on the consequences for product quality. The project involves 21 partners (12 academic, 9 industrial) from 10 European countries (https://h2020-intaqt.eu/). The INTAQT project is based on the “One Quality” concept, encompassing not only the various facets of quality directly linked to food products (nutritional, sanitary, sensory), but also the quality of production systems (notably their environmental footprint and respect for animal welfare). Its aim is to provide stakeholders with the knowledge and tools they need to characterize, authenticate and improve the quality of products from the diversity of European livestock farms. It focuses on products from the beef (milk and meat) and poultry (chicken) sectors, which account for some 65% of the economic value of animal products in Europe (Eurostat, 2019). Thanks to an extensive network of 90 farms in France, Belgium, Italy, Switzerland and Poland, we have been able to assess the impact of 18 European farming systems on the intrinsic quality of chicken breast and thigh meat. The farming systems studied were both conventional and organic, and covered a continuum of practices from the most intensive to the most extensive, with the use of fast- or slow-growing genotypes (including dual-purpose strains), giving access to more or less enriched environments (including free-range rearing). We propose here to present the first results obtained for the basic indicators of meat quality such as ultimate pH, color, drip and cooking loss, proximal composition, and tenderness after cooking and processing yields. These initial results will be supplemented by additional measurements of nutrients or hazardous elements, microbes and shelf life, as well as sensory analysis and consumer testing. Our long-term objective will be to develop multi-criteria quality assessment tools, as well as decision-making tools to guide the evolution towards more sustainable farming practices for the animal, the environment and the consumer.
