Valorisation multifonctionnelle des prairies dans le cadre des productions fromagères AOP du Massif central. Préambule

Abstract : In the Massif Central, a region of grassland, AOP dairy production is the main local economic sector of activity. In order to tackle new challenges and meet changing consumer and environmental standards, new requirements have been implemented whereby the type of grass that is fed to cattle contributes to enhancing the typical flavour and properties of traditional cheeses. These new requirements are aimed at promoting regional specificities and traditional know-how applied to cheese-making, and imply i) a repositioning of agricultural counselling where grassland use and communication with farmers are concerned, ii) a multifunctional approach to grassland and iii) learning to consider grassland diversity as an asset, all of which require new tools for adapting to new management constraints. The PRAIRIES AOP scheme, research and development scheme aimed at optimising grassland use, was set up in partnership with the Massif Central AOP dairy sector.
